Flavor Profile
Delicate and slightly sweet, with a savory depth often compared to crab or lobster. Lion's Mane takes on other flavors readily, making it a versatile centerpiece rather than a background note.
Texture
Dense and meaty when cooked, with a tender, almost fibrous bite similar to crab meat or a well-cooked scallop. It holds its structure under high heat, which is what makes it so good seared.
Culinary Uses
Sear it whole in thick steaks, shred it for tacos or crab-cake style preparations, or slow it into a risotto. It also dries and mills well, which is how our powder line begins.
Storage Recommendations
Store fresh clusters unwashed in a paper bag in the refrigerator for up to a week. Avoid plastic, which traps moisture and accelerates browning. Powder keeps for up to a year in a sealed, cool, dry container.
Freshness
We harvest to order wherever possible. A fresh cluster should be firm, white to cream in color, and free of any yellowing or sliminess — signs to look for whether it's ours or not.
